The Artisan's Touch
Our journey begins in the small, shade-grown estates of Idukki, Kerala. Here, the cacao trees thrive amidst black pepper vines and cardamom bushes, absorbing the aromatic complexities of the forest floor.
Each pod is harvested by hand by individual farmers like Rajesh, who have tended these lands for generations. The beans are fermented for six days in wild-wood boxes, then sun-dried until they reach a deep, wine-like aroma.
Finally, they are stone-ground in our atelier using traditional methods that respect the cellular structure of the cacao, resulting in a texture that is rustic yet impossibly smooth on the palate.
